I’m settled at a place in Lusaka for about a month. The staff here are very nice. They even offered me a helping of nshima with vegetarian relish. The vegetarian relish was bean curd based. This is probably the most delicious dish that I’ve had in Zambia. The familiarity of the bean curd and it being well spiced made me feel at home. I only wished our kitchen were slightly nicer so I could cook more.
Most of my energy these days are spent trying to stay away from the heat and procuring food. I need to figure out a more efficient lifestyle here.
